Dr. R.Vidyalakshmi is an Associate Professor in Food Biotechnology Department at the Indian Institute of food Processing Technology, Thanjavur, India. She received her M.Sc (Ag) in Agricultural Microbiology from TamilNadu Agricultural University, Coimbatore in 2002. She joined IICPT as Scientist in 2004. She has worked on rice quality analysis and screening of different rice varieties for suitability of fermented products. Her research focus is on food fermentaion, probiotics andmicrobial strain improvement for enhanced secondary metabolite production.She has under gone trainings in rice quality analysis, food colours, Laboratory Management System & Internal Audit as per IS/ISO/IEC 17025: 2005 and NABL requirements&Measurement Uncertainty for Chemical Parameters. She has also undergone an International Training on Principles, Operation and Maintenance of LCMS-8040 Triple Quadrupole UFMS with Lab Solutions Workstation at Shimadzu Asia Pacific Pte. Ltd., Singapore.

She is a trainer for microbial quality analysis of foods. She has guided nine undergraduate and twenty six postgraduate and three M.Phil students from other colleges in their project and dissertation work. She teaches basic microbiology and food microbiology for B.Tech (Food Process Engineering) students. She has served as an organizing committee member and conducted many national seminars and outreach programs for IICPT. She has twenty four publications to her credit in various national and international journals.
